Quinoa salad

In the craze for healthy eating (and an attempt to reduce my consumption of meat), I came across an ingredient I had never ever tried before: quinoa. I searched for recipes and found this one that will definitelly enter into my list of favourite recipes. Hope you enjoy it too!

Amounts for 2 servings.

100 gms of quinoa (I cooked it in the rice cooker, 2:1 ratio, using vegetable broth)
1/2 cucumber (diced)
100 gms of baby spina (roughly chopped)
2 spring onions (chopped)
1 tbs of olive oil
1 tbs of red wine vinegar
1 tsp of ground cumin
1 clove of garlic (finely chopped)



Mix the oil and vinegar, add the cumin and the garlic. Make sure all ingredients are well mixed before adding the vegetables and the quinoa at the end. It is simply irresistible!
